🧂 Ingredients:
- Mutton chops (with bone) – 1 kg
- Yogurt – ½ cup
- Ginger garlic paste – 2 tbsp
- Red chili powder – 1½ tbsp
- Turmeric – ½ tsp
- Coriander powder – 1 tbsp
- Garam masala – 1 tsp
- Cumin powder – 1 tsp
- Black pepper – 1 tsp
- Lemon juice – 2 tbsp
- Salt – to taste
- Oil – 4–5 tbsp
- Butter – 2 tbsp (for smoky finish)
- Coal piece – 1 (for smoke effect)
👩🍳 Method:
- Marinate chops: Mix yogurt, spices, ginger garlic paste, lemon juice, and salt. Coat mutton chops well and marinate for at least 4–6 hours (overnight best).
- Cook base: In a pan, add oil and cook marinated chops on medium heat until tender (add little water if needed).
- Dry fry: Once meat is soft, cook on high heat to reduce gravy and fry until oil separates.
- Smoke (smoky flavor): Place a hot coal in foil bowl, add a little butter, cover pan for 5–7 minutes.
- Final fry: Uncover and give a quick toss for charred edges.
- You can also grill these chops on grill pan except frying.
✨ Serve hot with naan, lemon wedges & chutney.
